Cool Fuel For Summer
It really has become that time of summer where we are beat and hot, but... hungry.
Most hearty dishes might not sound that appetizing during the mid-day heat when it is super hot, but you still have half of your day ahead of you.
You need some cool fuel.
This Vegan Melon Berry Salad recipe is both refreshing and energizing!
Ingredients:
1/2 cup fresh cut cantaloupe
1/2 cup fresh cut honey dew melon
Directions:
Take berry medley out of the freezer half an hour before preparation.
Take 1 whole honey dew melon and cut in half using a large kitchen knife.
Wrap half of the melon and save in the refrigerator for later.
Remove the seeds from center of other melon half using a spoon.
Repeat last 3 steps with a whole cantaloupe.
Cut cantaloupe half in half
Cut the melon fruit away from rein using a large kitchen knife.
Remove any small parts of rein that might be left on fruit.
Repeat the last 3 steps with honey dew melon half.
Cut the 4 melon quarters into small to medium square pieces.
Add all ingredients to a large bowl and toss with a fork and knife.
Serve immediately.
Refrigerate any leftover melon
1-2 Servings
