Green Bean Carrot Parmesan Casserole

 Creamy Casserole With Parmesan Cornbread Crust.  


I love food.  

I've always loved food of all kinds.

Even as a kid, I would be at the salad bar if it had better options.

There was always someone in my family, however, who didn't like some ingredient in a great dish that would make the dish not so great.

Having options for everyone is always a plus.

This Green Bean Carrot Parmesan Casserole recipe is a family favorite that takes a great classic dish recipe and mixes it up a bit.

Ingredients:

1 can French Style Sliced Green Beans, drained and rinsed
1 can Sliced Carrots, drained and rinsed
1 1/2 cups Milk
1/2 cup Corn Bread Crumbs
1 Celery Stalk, chopped
1/2 Onion, chopped
3 tbsp Butter
2 1/2 tbsp Cornstarch
1/2 tsp Morton Salt
1/2 tsp Pepper


Directions:

Preheat oven to 350 degrees F.

Lightly cook onion and celery in 3 tbsp vegetable oil.




Add salt, pepper, and cornstarch.




Mix well.

Slowly add milk and continue cooking until mixture has thickened.




Add eggs. 

Cook over low heat for about 1 minute, stirring constantly.

Stir in green beans, carrots, and 1/2 cup parmesan.

Stir mixture until well blended.

Use 1 tbsp vegetable oil to grease a large Pyrex Baking Dish.

Pour  mixture into greased baking dish.

Mix 1/2 cup parmesan and cornbread crumbs in a separate bowl.

Spread cornbread mixture evenly over mixture in baking dish.

Dot with butter.




Bake 30 minutes.

Serves 8
