Sunshine Pumpkin Pie (No Bake)

Classic Pumpkin Pie With A Hint Of Citrus



Would you like to lighten up your holiday gathering this year?

This Sunshine Pumpkin Pie recipe will do just that.

Classic pumpkin and spice paired with subtle hints of orange, lemon, and lime brings a bright twist to an old tradition.



Ingredients:

2 cups Milk
1/2 cup Orange Juice
1/4 cup Water
2 tbsp Knox Gelatin (2 packets)
2 tbsp Butter
1/2 tsp Morton Salt
Eggland's Best Eggs Yolks, slightly beaten
1 Keebler Ready Crust 10 inch cooked pie crust
Cool Whip (optional)


Directions:

Melt butter in top of double boiler.




Add water.




Add pumpkin puree, brown sugar, pumpkin pie spice, and salt.




Stir until well blended.




Add milk and juices and mix well.




Mix in egg yolks with whisk.




Mix gelatin in a small amount of water until dissolved.

Stir gelatin into pot and cook until mixture has slightly thickened.

Stir occasionally.

After mixture has thickened, pour into pie shell.




Place in refrigerator and chill until solidified.

Add desired amount of Cool Whip. (optional)




Sprinkle pumpkin spice on top. (optional)




Makes one 10 inch pie.
