Banana Pudding With Meringue

Classic Comfort

The craving for sweet, classic, tasty treats seems to come along with the month of October.

This Banana Pudding With Meringue recipe will WOW that classic sweet tooth.


Ingredients:

1 lb Bananas (3 or 4)
1/2 tsp Morton Salt
2 1/4 cups Hot Darigold 2% Milk
1/4 cup Sugar (for meringue)


Directions for Pudding:

Mix flour, 3/4 cup Sugar, and salt in top of double boiler.





Slowly stir in hot milk, add vanilla, and cook until mixture thickens, stirring constantly.




Stir constantly.

Separate egg yolks from egg whites.

Beat yolks until fluffy.

Stir a small amount of hot mixture into beaten yolks. 




Pour back into double boiler, stir, and cook for 2-3 minutes



Remove from heat and cool until warm. 

Slice bananas into thin, circular slices.

Alternate layers of sliced bananas, vanilla wafers, and pudding in oven safe dish.







Directions for meringue (optional):

Preheat oven to 400 degrees F.

Mix 1/4 cup sugar and egg whites and beat until stiff.

Add lightly to top layer of pudding.

Bake for 7-8 minutes or until golden brown.

Serves 6-8
